Hay Shed Hill|Margaret River|Premium Wines

The 2008 Hay Shed Hill Cabernet Merlot highlights the strength of Margaret River in producing medium bodied, flavoursome and elegant Cabernet blends. Ripe berry fruits and ripe textural tannin are the signature characteristics of this most classic of all red blends.

Vintage

Margaret River experienced a mild, even and relatively stress free 2008 vintage. Coming off a wet winter the ground was well hydrated for the start of spring. The weather throughout spring and summer was excellent with generally mild temperatures and good sunshine – great grape growing conditions. The best performer of the vintage was undoubtedly Cabernet Sauvignon with the even mild season allowing great colour and flavour development. The early indications are that 2008 will be a top year for Margaret River Cabernet Sauvignon and Cabernet blends. 

Winemaking

Cabernet Sauvignon and Merlot grapes from the Hay Shed Hill vineyard were harvested and de-stemmed into open topped vessels for fermentation on skins with traditional pump over cap management to aid colour and flavour extraction. The wine was matured in French oak barrels for 13 months allowing integration of fine oak and development of the soft ripe tannin.

Colour

Deep crimson red of good intensity and vibrant hue.
 

Nose

Intense berry fruits, cassis and chocolate mint characters notes with background cedar like oak. 

Palate

Medium bodied this wines shows a vibrant and lively fruit driven palate with a fleshy middle and soft mature ripe tannin.
